A super simple kiwi classic, so simple you don't even really need a sieve.

- 1cup Flour
- 1tsp Baking Powder
- 1/4tsp Salt
- 1/4cup Sugar
- 3/4cup Milk
- 1Tbsp Melted Butter
- 1 Egg
INSTRUCTIONS
- Place all dry ingredients (flour, bakin powder & salt, sugar) into a bowl.
- Add milk to dry ingredients and mix well, so there are no lumps.
- Mix in egg. Once egg is mixed through add melted butter.
I melt my butter in a small dish over hot water - Leave mixture to rest in the fridge for approximately 30mins or so.
- Heat pan and add either butter or oil to cook in (which ever you prefer)
When using the electric frying pan I set it for 'Pancakes' (because it's old school & has these types of settings) which is about 380°C - Spoon mixture into pan (whatever size you desire), cook until bubbles form & burst. Flip pikelet & cook for about the same amount of time side 1 cooked.
If side one was over cooked either turn down pan or cook for less time. Pikelet making is a lot of trial & error - Serve with your favorite topping. Butter, whipped cream, jam, golden syrup, the list is endless
