- 400g (appox) Chicken Breast
- 50g Green Curry Paste (or to taste)
- 1 can Coconut Cream
- 1/2tsp Shrimp Paste
- 1tsp Sugar
- Beans
INSTRUCTIONS
- Cut chicken breast into bite sized pieces
- Heat approximately 2Tbsps of oil in a pan
- Stir in Green curry paste
- Add chicken to pan and coat evenly
- Slowly pour in coconut cream, swirl a splash of water in the can to get an excess
- Simmer gently for approximately 30mins
- Season with shrimp paste, stir through 1tsp of sugar & add beans (to paste)
- Reduce heat and simmer for 3 to 4 minutes (or until cooked)
- Serve on/with rice
