Fish doesn't always have to come from a takeaway bar and it doesn't need to hard to cook. Every now and then we like to change things up by shopping somewhere different (different store, different selection), from doing this we found frozen fish portions at Prestons. A pack comes with four individually packaged portions and costs around $5, perfect for making a super affordable dinner.

TIME TO MAKE: Two or three episodes of Simon's Cat
- 1 Fish Portion
- 1 small Courgette
- 1 small Carrot
- Mediterranean Chunky Dip Roasted Capsicum with Cashew & Parmesan
INSTRUCTIONS
- Bring medium pot of water to the boil.
- While waiting on your water to boil take vegetable peeler and peel courgette & carrot into ribbons.
- Heat 1Tbsp oil (or whatever you cook with) in small frying pan. Add ribboned vegetables and cook till soft.
- At the same time as cooking your vegetables place fish (still in bag) into boiling water. Leave to cook in boiling water for 5mins.
Fish & vegetables should take the same amount of time to cook - TO SERVE: Pile ribboned vegetables in centre of plate. Remove fish from water, take out of bag & place fish on top of courgette & carrot pile. Season fish with salt & pepper to taste and top with a teaspoon or so of Mediterranean Chunky Dip.
