Rather than having the same ol' food, day in day out, I like to mix it up for the Tiny Human. Today we had this super easy to make frittata, which could also be made for breakfast.
INGREDIENTS

TIME TO MAKE: Approximately an episode of The Big Bang Theory
- 3 Eggs (size 7)
- 1 Small Potato
- 3 Pieces of Broccoli
- 1/4ish Red Capcicum
- 3 Garlic Cloves
- Cheese (optional)
- Salt & Pepper
INSTRUCTIONS
- Cut potato's and capcicum into small pieces and quarter broccoli pieces.
- Heat oil in small cast iron pan. When hot add potato's & crushed garlic. Quickly fry to get some colour on the potato's. Turn down heat and cover with a lid and leave to cook for 3 - 4mins.
- When potato is soft, add capcicum to pan. Cook for about a minute, then add broccoli. Cover and cook for a further 2 - 3 minutes.
- In a mug quickly beat 3 eggs.
Mix less if you want to see egg whites as well or go to town if you want it yellow. - Add egg to the pan with the vegetables. Cover and cook for 2 - 3 minutes.
- Grate cheese over eggs & vegetables (as much or as little as you prefer), then grill in oven.
This will also cook the top, no need to flip...yay! - When cooked, plate and grate with a little more cheese (if you choose).
