I was first introduced to this recipe by my mother in law, it was introduced to her by a friend. My husband now makes it for us and it is definitely a favorite. So tasty and easy to make.
INGREDIENTS

* Adjust amount of chilli according to your preferred level of heat
TIME TO MAKE: Approximately 1.5 episodes of 'Castle' (with no ad breaks)
- 750g Pork
- 1 1/2cups Coconut Milk
- 1 1/2tsp Laos Powder
- 2tsp Grated Ginger
- 2 Small Onions
- 4 Cloves Garlic
- 1 - 2tsp Chilli Powder*
- 1tsp Dried Shrimp Paste
- 1tsp Ground Corriander
- 1tsp Cummin
- 1 - 2tsp Sugar
- 1tsp Salt
INSTRUCTIONS
- Cut pork into small cubes
- Put pork, coconut milk & other ingredients into pan/pot and bring to boil, stirring constantly.
Stirring prevents the coconut milk from curdling. - Turn heat to low and continue to simmer pork till tender & liquid is almost absorbed, stirring frequently.
- Serve on/with rice
